There’s nothing like the smell of banana bread baking in the oven on a Saturday morning. Usually I tend to go for something more savory for breakfast but this morning I was craving a warm slice of banana bread with my coffee and thought I’d drop this recipe here for y’all! It’s definitely a crowd-pleaser in the clinic!
Banana Bread
3 very ripe bananas, peeled and mashed
1/3 cup of melted butter
1 tsp of baking soda
Pinch of salt
3/4 cup of sugar
1 large egg, beaten
1 tsp vanilla extract
1 cup all-purpose flour
1/2 cup cake flour (if you don’t have on hand, you can sub for additional 1/2 cup of all-purpose flour)
Optional: add chocolate chips and walnuts (I usually eye these out)
Preheat oven to 350F and butter a 4×8 inch loaf pan (you can also use coconut oil spray for this). Mix the mashed banana and melted butter together, then add the baking soda, salt, sugar, egg, and vanilla extract. Add the flours and mix thoroughly. At this point you can pour the batter into the pan or add additional toppings like chocolate chips and walnuts, my personal favorites! Bake in the oven for 50 minutes to 1 hour, until cooked through. Let cool before enjoying!
